Happy 4th of July week, friends! We are officially in the 90’s in Michigan and my kids are basically living in the backyard in their swimsuits so this week’s menu is un-fussy. I tend to use my slow cooker and Instant Pot more in the Summer than in the colder months because it helps me keep the house at and un-swamp temperature so a lot of these meals require very little burner or oven time.
What’s everyone making for the Fourth? We typically do burgers + dogs and a bunch of sides but this year we’re changing it up. I love the Fourth of July because there is little expectation as far as entertainment and menu planning goes–it’s super laid back and I can totally appreciate a holiday where I can drink a beer at noon and eat off of paper plates. More often than not the girls are in bathing suits all day and have mowed down about 4 bomb pops each by dinner and crash after sparklers. I can’t wait!
I’m also a little sad because this is Lucy’s last “first” holiday. I can’t believe we’re a few months away from her 1st birthday but I will save my ugly crying for a different day.
