As a mom, most days I forget to feed myself. You’d think I would have a slamming bod from all the meals I have forgotten to eat in my adult life but no. That’s a hard no. Truth be told: I love breakfast. Truth be told, again: I love sleep–so when I have a choice between making myself something to eat in the morning and snuggling up with a warm cuddly baby and hitting the snooze button more times than I care to admit–I’ll choose that warm cuddly baby every dang time. This is also why I show up to Preschool drop-off looking like the pigeon lady from Home Alone 2 but that’s a story for a different day.

These breakfast burritos require a little prep but will pay off ten-fold on the mornings when you spent too long watching ‘The Office’ bloopers on YouTube and you have to get out of the house and be an adult without a rumbling stomach. Stuffed full of breakfast sausage, Cholula scrambled eggs, crispy tater tots (my Midwest is showing, I apologize), and all the typical burrito fixings, they are sure to keep you up and running. Or up and walking. Or just up and not hungry, no judgement here.
